Catering and Meatballs!

These chefs have been working very hard over the past 2 weeks!  We have make Greek turkey burgers with cucumber sauce (aka tzatziki), spicy meatballs, catered for the varsity football team, and made 150 apples for the faculty.  Check out our photos!

Meatballs!  Ground Turkey, Spicy Sausage, and Prosciutto.....YUM!

Using crusty bread for the meatball filling.

150 Apples! We always take on a lot at the Cougar Cafe!  The front kitchen was making 12 pans of lasagna at the same time.

Bacteria (EVERYWHERE!)

The Introduction to Culinary Arts classes are preparing for the ServSafe Exam.  This week we made petri dishes and went around the school to see what our hands come in contact with on a daily basis.  Germs are everywhere and that is why handwashing is so important.  Take a look at some of our students taking samples.

Fresh Ricotta....YUM!!!

Today we did a fresh ricotta on garlic crostini demo.  It was delicious! We learned about chiffonade cuts, what "on the bias" means, and how cheese is made from scratch.  The recipe is linked on our page under "recipes".  Here are some pics of our chefs helping out!

Test Kitchen

Today we tried out new recipes for Cougar Cakes Cafe.  The coffee cupcake was amazing!  We used fresh blueberries, but they were too sour in our blueberry pancake cupcake.  These chefs decided to take out the fresh blueberries and add blueberry preserves for the filling.  The maple cream cheese frosting on top was delicious!  Here is a pic of three of our Culinary II Honors students hard at work!
